Organic farmers revive Kochi Prefecture's traditional food culture "Kokera Sushi" and start selling it|Beautiful pressed sushi that we want to be proud of in the world

On August 2, Kokeraya Sohonten (Kochi City) in Kochi Prefecture opened a store and recreated the traditional food culture of Kochi Prefecture "Kokera Sushi" and started selling it anew.

Kokera sushi at Kokeraya Sohonten is made with vinegared rice made with yuzu vinegar from Kochi Prefecture mixed with loosened grilled mackerel. Ingredients such as brocade eggs, carrots, and shiitake mushrooms are placed on the vinegared rice, and the wooden frame is layered and pressed down with a weight. From the layering of sushi rice and ingredients, it has the meaning of "layering happiness and joy".

 

Kokera sushi has been eaten in Kochi Prefecture for ceremonial ceremonies and childbirth celebrations for about 150 years, but in recent years the eating habit has disappeared. Mr. Kawabuchi, the owner of an organic farm, came to sell kokera sushi when a friend who came to Kochi on a trip saw kokera sushi on a tourist pamphlet and asked to eat it. I couldn't find a store where I could get it. I made up my mind to research, research, and practice how to make it, and arrived at the opening of the store. Utilizing the property of an old shop as a store, Nostalgic atmosphere You can taste it.

 

Kokeraya Sohonten is open from 9:00 ~ 18:00 (open daily). Local access is about 20 minutes from "Kochi Station" by car and about 40 minutes from Kochi Airport. Mail order is also available.
