【Local cuisine trip】Hokkaido "Teppo soup" - The flavor of Hanasaki crab to taste in Nemuro and Kushiro

The local dish of the eastern Hokkaido area, "Teppo Soup", is a simple yet flavorful dish made with Hanasaki crab, kelp broth, and miso. In particular, it has been popular for a long time as a fisherman's dish in Nemuro and Kushiro. The name "Teppo Soup" comes from the fact that poking crab legs with chopsticks is similar to the action of stuffing a gun with bullets. Hanasaki crabs are landed in Nemuro from July ~ September and in Kushiro from March ~ September, but the recent catch has decreased to 1/4~1/5 of what it was 30 years ago. In response, Nemuro City is taking measures to secure resources, such as artificially hatching and releasing juvenile crabs. "Teppo soup" is not only popular as a home-cooked dish, but also can be tasted by tourists at some restaurants.
