"Uono no Sato" is a complex facility that sells souvenirs such as specialty products and local sake, a sweets shop, and a restaurant. "Kotohana" will reopen by renovating the fresh fish sales area. The name of the restaurant is derived from the kanji for 糀, which is indispensable for fermented foods, divided into rice (rice) and flower (hana).

The concept of the products to be sold is "a wide range of fermented foods that go well with rice." We have a lineup of fermented foods in the prefecture that are eaten with rice, such as miso and soy sauce from Uonuma, dairy products from Sado, and fish and meat pickled in sake lees and miso. In addition, new products such as deep-fried rice flour and rice flour made from raw materials from Minamiuonuma and Uonuma honey bread are sold to go.

Business hours are 9 a.m. ~ 7 p.m. No regular holidays. Local access is 1 minute from the Kan-Etsu Expressway "Shiozawa Ishiuchi IC".

The renewal opening is due to the Corona disaster, and the number of group sightseeing bus tours has decreased sharply. We will transform our business and propose fermented foods to individual tourists. Niigata Prefecture, a snowy country, is strengthening the dissemination of fermented food culture throughout the prefecture.

Makino says, "We would like to think about creating a store where tourists can think about Niigata while eating food after returning home."
